This is a nice alternative to a traditional greek salad and leaves room to add or remove items to customize it to your family's tastes.
Mix together the lemon juice, vinegar, oregano, garlic and some salt and pepper in a small bowl. Slowly add the oil last and mix together until well blended. Let it sit while you prepare the salad so the flavours combine.
Rinse the quinoa and then put the quinoa, 2 cups water, 1 teaspoon salt and 1/4 teaspoon pepper in a small saucepan. Bring it to a boil and cook until the water is absorbed and the quinoa is tender, about 12-15 minutes.
Transfer to a serving bowl and fluff it with a fork. Let it cool sligthly before adding the rest of the ingredients. Once slightly cook, add the tomatoes, olives, red onions, cucumbers and dressing and toss to coat.
Cover and refrigerate for at least 1 hour. The longer it sits the better the flavors come together.
Just before serving, sprinkle some feta cheese on top.
